Odyssey de Culinaire

The Oklahoma Restaurant Association (ORA) will present its annual voyage of Odyssey de Culinaire 6 p.m. Thursday at Will Rogers Theatre.

The event will feature Tulsa chefs Tony Perez, Warren Duck Club; Tuck Curren, Biga and The Local Table; Sam Bracken, The Canebrake; Doug Atkinson, The Brasserie and Sonoma Wine Bar & Bistro; and Jakub Hartlieb, Elements of River Spirit Casino. They will prepare a six-course meal and an accompanying wine selection, as well as a dish preparation presentation from each of the chefs and their assisting ProStart student.

On Aug. 11, Oklahoma City chefs will travel to Tulsa to prepare a fantastic dining experience at the Doubletree Hotel at Warren Place. Participating chefs include David Henry, The Tasting Room and Western Concepts; Ryan Parrott, Iguana Mexican Grill; Christine Dowd, Trattoria il Centro and Aunt Pittypat’s Catering; Mark Vannasdall, The Restaurants at Chesapeake; and Cally Johnson and Kathryn Mathis, Big Truck Tacos and Mutt’s Amazing Hot Dogs.

A wine reception will begin both evenings, with dinner following at 7 p.m. Tickets are $125 per event or $200 for both evenings. Those wishing to attend may register online at okrestaurants.com or call 800- 375-8181 and ask for Chandy Stout. Seating is limited, so reservations will be taken on a first-come, firstserved basis.

Odyssey de Culinaire is a fundraising and awareness dinner to benefit the ORA’s Hospitality Career Initiative.

ART UNDER THE GOLD DOME
The Gold Dome, 1112 N.W. 23rd, is presenting a new art exhibit. The exhibit, “Multicultural Visions” will have an opening reception on Aug. 9 from 5 to 9 p.m.

“Multicultural Visions” will present original artwork created by artists such as Jaime Macias of Columbia, Laura Berthila of Mexico and Rocio Perez of Peru, coupled with live art demonstrations. The art on display will include oil pastels, oil painting and basket weaving.

Native Spirits Winery will hold a wine tasting with live music from Travis Beeson during the reception, and partygoers will get a taste of Peru from Inca Trail Restaurant, 10948 N. May, and pastries from Platt College.

J. Longley (pictured) was a restaurant consultant for Nhinja Sushi and Wok, 13905 N. May, and owned TacOasis in Norman, where he fixed unique tacos with his own sauces and developed quite a following of customers. That business has closed, but Longley is starting a new position in the fall in the food business.

Family: “Wife, Jenny, and Jack, 4, and Will, 2-and-a-half.”

Education: “The University of Oklahoma, where I majored in psychology.”

Listen to: “Normally rock on The KATT, but also The Sports Animal.”

Most Treasured Possession: “My wife, Jenny, and an autographed football from the OU football 1985 championship season. It was given to me by my dad who got it from Barry Switzer.”

Memorable meal on a recent trip:

“The Spud Point Crab Company in Bodega Bay, a little hole-in-the-wall place in California with the freshest Dungeness crab.”

Where you head for Asian food:

“Padthai in Campus Corner in Norman and for wok-style food, Pei Wei, for sure.”

Best tip for an amateur cook: “Start with flavor combinations that you know will work well together and then experiment by improving on them.”

Closed TacOasis? “It was due to seasonality and the changing of the laws in Norman here where they had a three-hour limit on trucks in Norman, which means I had to move it every three hours.”

Fun stuff: “At TacOasis, we had a spicy challenge, and people had to eat one of each of the four spicy tacos with ghost pepper hot sauce. More than 40 people took the challenge and only six finished. The ghost pepper is the hottest pepper in the world.” —Carol Smaglinski
