Mi corazzina!
Guest executive chef Luca Corazzina from 312 Chicago will delight your palates Tuesday at Deep Fork Wood Grill & Seafood, 5418 N. Western. This native Italian immigrated to Chicago in 1986 and has been pursuing his passion as a chef since then. He worked at the Walt Disney World Resort, as well as Vivo (also in Chicago), before accepting his new role at 312. Make reservations at 848-7678.

Mardi Gras mania
Looking to celebrate Fat Tuesday? Participate in the ritualistic gorge and expand your culinary knowledge by enrolling in Tuesday’s Creolestyle cooking class at Rococo, 2824 N. Pennsylvania. Call 528-2824 to reserve your spot.

Booze, music, T-shirt giveaways and much more will mark Fat Tuesday at Pearl’s Oyster Bar, 5641 N. Classen. The Piranha Brothers will supply the blues while Pearl’s will serve up its assortment of Orleans-inspired delicacies. Call 848-8008 for more information.

You also can catch the Cajun excitement at VZD’s annual Mardi Gras celebration, which lasts through Fat Tuesday. Red beans and rice with andouille sausage and spicy gumbo will be served each day of the festivities, culminating with a happy-hour crawfish boil on the final day.

Fresh findings in Edmond
Submarina California Subs opened its first Oklahoma location Feb. 6 at 2015 W. Danforth in Edmond. Eventually, 15 locations are expected to be dotted throughout the metro.

This sub shop hails from Poway, Calif., just outside of San Diego.

Local franchise owners David and Codi Darakhshan said they were drawn to the healthy products that enticed customers at other Submarina locations and wanted to share its benefits with their community.

Odds and ends
Dakil Auctioneers Inc. recently held an auction for the former County Line BBQ, 1226 N.E. 63rd, and another for Shorty Smalls, 4500 W. Reno, which is now shuttered. Note that the former Asian Eternity, 6161 N. May, is now Hibachi Grand Buffet, which opened last weekend.

At the Tratt
On Monday, check out Trattoria Il Centro, 500 W. Main, for dining and wine pairing, prepared especially by Chef Christine Dowd. Get there by 6:30 p.m.for cocktails and free pizza before the main dinner and pairing begins.

Chow chat
Oklahoma City native Debbie Leland is now the sole owner of The Prairie Gypsies, 411 N.W. 30th, where patrons can arrange catering or stop by for take-out, as she offers gourmet food ready to heat and eat.

Famous look-alike: “Paula Dean.” Best feature: “I’m kind of tenacious.”

Family: “Three adult children including Skye Leland, Beau Leland and Brook Leland and two grandchildren.”

Favorite thing to do that doesn’t cost money: “Play with my Australian shepherd, Merl.”

Stay away from: “I am allergic to shellfish.”

But would kill for: “Chipotleand lime-marinated chicken, wrapped in bacon and roasted, and it’s now on our menu.”

Greatest extravagance: “Some wonderful new kitchen gadgets. My kids gave me a mortar and pestle and I just love it.”

Nobody knows: “I was Wrestling Queen at South East High School in OKC.”

Who do you admire: “I admire Ann Lowrance, [Oklahoma State University] professor and President Cindy Ross of Cameron University.”

Like to meet: “Guy Fieri, Alton Brown and Anne Burrell of the Food Network.”

Culinary confession: “I could write a book! On a catering job at a ranch in Texas in October, the queso was in a container inside a box in the back of the car, and when we hit a bump, we heard a ‘blop.’ It tipped over and the cheese went everywhere and over me when I opened the hatch, but we had a gallon left. Cost $160 to detail the car and it smelled funky in there.”
