Keep meals light in the summer heat. Here are seven places serving up scrumptious salads!

This Edmond gem has a mean — and delicious — salad game, starting with the rustic guacamole, which comes topped with corn, onion, rajas, spices and fresh avocado. Or try the chopped cobb salad, made with grilled chicken, tomatoes, cooked eggs, bacon and cheese crumble.



The Metro Wine Bar & Bistro

For lunch, try its refreshing watermelon salad, dressed with cheese, spiced nuts and balsamic caramel. When dinnertime rolls around, opt for the beet salad — pickled onions, goat cheese and pistachios — and add some grilled chicken or shrimp to complete the meal.

Dine and watch the glass-blowing going on in the studio next door. Also worth checking out is Italian Jim’s signature wedge salad, complete with bacon and house-made dressing. The caprese comes topped with basil, tomatoes, mozzarella and a balsamic reduction drizzle.

Treat yourself! You can have it all with the fajita beef taco salad, topped with marinated fajita beef, refried beans, lettuce, tomatoes, onions, black olives and cheese. For something lighter, go with the grilled shrimp tostada salad: grilled shrimp, cojita cheese and crisp tostadas.

It may look like an Arby’s from the outside, but Greek and Mediterranean delicacies await inside. Try the tabouli salad, a blend of chopped herbs, tomatoes, cucumbers and cracked wheat, or a traditional Greek salad prepared with olives, pepperoncinis, and onions and topped with feta cheese.

Don’t pass up the chopped grilled asparagus salad at West. The lettuce and julienned asparagus is mixed with a red wine vinaigrette, goat cheese and spiced almonds. The Brussels sprouts salad is a must-try, too, with blanched sprouts, dried apricots, toasted almonds and garlic red wine vinaigrette.

Try its spinach salmon salad, made with a maple soy-glazed salmon fillet, almonds, mushrooms, oranges and red onion, all tossed in raspberry vinaigrette. Its chicken salad comes with pecans, water chestnuts, candied ginger and lightly curried mayonnaise.
