Homemade Yogurt and Buttermilk

Yogurt, buttermilk, sour cream and kefir are fermented old world foods. They are remarkably uncomplicated: only milk (or cream) and a starter are needed. These products are much fresher and considerably less expensive than store-bought. As an added bonus, we learn how to control the quality of ingredients, flavors, caloric count and taste-whether mild or tart. Students will leave class with yogurt, buttermilk, sour cream and kefir ready for fermentation at home and kefir grains.
