A “flexitarian” is a concept that has been around since the ’40s, when our government asked citizens to give up meat for some meals, so the extra rations could be donated to our troops at war. Now scores of folks are flexing, so in honor of Earth Day on Friday — which also happens to be Good Friday — consider making your next meal meatless.

In what used to be a former chimney shop, owners Juan Manuel Diaz and his wife, Solorro Garcia, opened their first Mexican restaurant in late June. Filled with family members, its enchiladas are pure Mexican, not Tex-Mex, they say. To the delight of its many regular customers, the tortillas are handmade on the spot.

New ones again, my friends. Whether the food-savvy community is deep into the vegetarian movement or are true meatheads, culinary experiences give us happiness. At the very least, food deserves praise for the ultimate pleasures it gives us, in bad times or good. With seven new restaurants on board, there’s plenty of chow to go around.
