A “flexitarian” is a concept that has been around
since the ’40s, when our government asked citizens to give up meat for
some meals, so the extra rations could be donated to our troops at war.
Now scores of folks are flexing, so in honor of Earth Day on Friday —
which also happens to be Good Friday — consider making your next meal
meatless.
