Suppose you see a separate note attached to a menu announcing the blue-plate specials. Do you like to experiment? It’s true, some chefs use diners as guinea pigs when they’re experimenting with new dishes. But sometimes the food turns out so good, the dish actually makes it on the permanent menu.
