Head
to south OKC and visit Panang Thai, where vegetarians are always
welcome. Start with a fried tofu appetizer with sweet-and-sour sauce.
Curries feature rich, creamy coconut milk, and each may be made with
vegetables and tofu instead of meat. The massaman is tofu simmered in
coconut milk with onions, peanuts and potatoes. All may be made anywhere
from no spice to very spicy. Or opt for one of the flavorful rice
dishes, which can also be made with vegetables and tofu.
