Saddle up 

The newest and second beer in the Oklahoma City-based Mustang Brewing Company’s Saddlebag series: Imperial Court Stout.

Brewmaster Gary Shellman said the beers hearken back to Russian imperial stouts.

“The beers have traditionally been rich with dark chocolate and caramel flavors,” he said. “The Imperial Court Stout has all those qualities, and the raspberries add a nice bit of tartness to the beer.”

Shellman, a past president of a local home-brewing club called The High Plains Draughters, said the recipe came from former colleagues Stan Babb and Mike Divilio.

“I asked them if we could brew it commercially, and they were happy to say yes,” Shellman said.

The Imperial Court Stout comes in at almost 10-percent alcohol by volume, but the raspberries help mask some of it. A hint of hops on the finish is there “so you’ll know we’re doing our job right,” Spellman said.

Only 12 kegs will be available, and they are on tap at James E. McNellie’s Public House, 1100 Classen Drive; Tapwerks Ale House & Cafe, 121 E. Sheridan; and The Abner Ale House, 121 E. Main in Norman, until the batch is gone.

Approximately up to 300 cases of 22-ounce bottles, otherwise known as bombers, also will be available.
