The tower at 333 W. Sheridan is 50 stories high. Vast, located on the 49th floor, will offer lunch and dinner Monday through Saturday, and be closed on Sundays. The restaurant is operated by Williams & Associates Hospitality, led by John Williams and Chef Andrew Black.

The menu is touted as “globally inspired American cuisine.” Williams said diners can expect American fare like steaks and seafood, with the seafood flown in daily from Foley Fish in Boston.

The restaurant offers seating for 135, additional seating in private dining rooms, and 41 seats at the bar.

Although it will sit at the top of a gleaming new skyscraper, Williams said the intention was not to overprice the market.

“If you want to spend a lot of money and drive the experience, we have the capacity to deliver that for you,” he says. “But the intent is to manage the price.”

To get to the top of the tower, Devon Executive Vice President R. Alan Marcum said two express elevators will take diners from the lobby to the top of the tower, and back, with no stops in between. The 50th floor will house banquet space.
